No...it was homemade tomato sauce, not alfredo~


For almost the entirety of yesterday and today, I've been in the kitchen cooking. Made the lasagna yesterday, as well as a bunch of breakfast sandwiches (muffins/biscuits with egg and sausage/bacon/ham; breakfast burritos with eggs, hash browns (seasoned with onion and peppers), and sausage; and a few servings of biscuits and gravy, eggs, hash browns, and a sausage patty) that I've frozen and plan on taking to work for breakfast every morning.

Then today, I partially cooked, then shredded some chicken breasts, cooked them the rest of the way, and then added a few types of salsa and let them simmer. I then made them into sandwiches using these Mexican "country bread" rolls that I had. Made some turkey and ham with medium cheddar and mozarella sandwiches on Italian rolls, and froze all of these for lunches. Finally decided to make some pasta shells, heat up the sauce I had initally planned for the lasagna, and cooked some whole Italian sausages. Put the pasta and the sausages in containers, and covered them with the sauce (which also contained the rest of the portabello mushrooms left over from the lasagna). These I froze as well.


So between the 10 Healthy Choice frozen meals I bought at the grocery store, the lunches I made today, and the breakfasts I made yesterday, I have enough breakfasts and lunches for a month and a half. It WAS a time investment, to be sure, but in the long run, it's much better (both money-wise and health-wise) than eating fast food on a semi-regular basis.

The lasagna has been transferred to a storage container, and is not photogenic in the least at this point. I might think about taking a pic of all the food I prepared over the weekend, however. It's a veritable s***-ton.
