Anything by Mel Brooks, High Anxiety, Blazing Saddles, Spaceballs, and Young Frankenstein come to mind.

Any Chris Farley movie (Tommy Boy, Black Sheep, sure there are more but I can't think of them now).

Also, Hot Fuzz, Shaun of the Dead, Spinal Tap, Austin Powers, Airplane, and the South Park movie.
