Just beat the game. Clocked in around 30 hours. My final party was Pietro, White Knight, Jilva and Gon.
There are no complete gamefaqs on this game so I'll share with you the summons I found as part of Gon's Sub-quest.
You need Gon in your party to activate these battles and you can only do this sub-quest while you're preparing for the final dungeon (and you have control of where Gilbert the dragon takes you). Here's where you'll find the summons.
Bryonia. Sail to Bryonia via the boat in Pasela. You'll see a giant glowing book. Talk to it and defeat the frog.
Takinen Village. Go all the way to the left of the village and keep going left until you reach the cliff. There will be a glowing bird symbol on the ground. Talk to it and defeat the bird.
Roma City - Castle. Go inside Jilva's castle in Roma City. Go up the left set of stairs and you'll see a glowing image of a unicorn in the stained glass on your left. Talk to it and defeat the unicorn.
PoPoLoCrois - Castle. Go all the way to the left and down into the basement of the castle. You'll see a large glowing painting of a dragon. Talk to it and defeat the dragon. This is the second most powerful summon.
Remoria Continent. This is the king of knights. Its in one of the first few rooms of this final dungeon. You'll see various artifacts laying around. Talk to the glowing knight and defeat him. This is the ultimate summon and is REALLY powerful.
