I don't really like rpgs where you travel around in a party, but it doens't bother me that much. So what I mean is, do i have to have a party, or can i have just 1 character? OR, if I make a party, could I make a party of 1 person? (through-out whole game, no one joins you)

No, you can't turn them off. But what you can do, is give your character anti-critical or give him/her an equippable item that offers this ability.
In my game , you start off solo, and the "tattered clothes" you start off wearing don't add any defense, but give you anti critical.
