Kung Fu Panda, for the awesome animated beginning. The rest of the movie is pretty good too. It's the only 'children's' movie I own.

Jackie Chan's "Gorgeous" immediatley comes to mind. There is a ten minute fight scene at the end, but you might as well fast forward through the rest of the movie to get there.

Flash Point is a pretty good Donnie Yen movie, but really? It's all about the fight with Seraph at the end.

And The Usual Suspects, you have to watch the whole thing but the last few minutes are what make the movie.
