Before Monster Farm 3's JP release, Tecmo held a contest in which people sent in some monster art. They published them online afterwards, along with some newer art sent after that.

It's all done by kids.

Also, if you click on "Monster", you'll find some fan suggestions for newer monsters. In retrospect, some of them actually made it into some of the games, like this guy:
