I honestly have no preference and I'll play any game from any genre including sports and racing...

If I could go with JUST ONE then I'd definitely have to say 4X like Galactic Civlizations and Civilization IV. I love being an armchair general.

Shmups and fighters. They don't require big blocks of time and just seem to be the most rewarding gaming experience for me...nothing is spoon fed to you.

Action Adventures by far. Most of my favorite games are AcAds but it's also the broadest genre. Second is RPGs. In most other genres I'm only into a few select series. And Hot Shots Golf is the only sports game I've played in years.

EDIT: Oh, I forgot sandbox games like The Sims, Animal Crossing, Bully, etc.
