The only thing you would be copying is the name. In every FF the characters have different names (sometimes you give them the names), the towns, everything. Also the objective varies.Game in progress: "Cards of Destiny"!

The problem with copying professional games is that most of us have already played them. Why would we want to play them again on an RM that will likely not be as good?
I am not knocking the idea, because I'm sure there'd be a novelty factor in it.
